Rice A Roni Salad

I figured I would post this recipe too because I love it and I know that Kristen needed the recipe again.

Rice A Roni Salad
1 large or 2 small boxes chicken Rice A Roni, cooked and cooled
2 boneless, skinless chicken breasts
1/3 cup mayo
green onion, chopped (as much as you like)

Salt and pepper chicken and place in saucepan. Pour water over top to cover and add dried minced onion to your taste. Boil for 20 minutes. Let cool in broth. SAVE BROTH!! Pull chicken apart or cut into small pieces. Put cooled rice into a large bowl and add chicken and green onion. Mix well. Put mayo into a bowl and thin with the saved chicken broth; making it pretty thin. Pour over rice mixture and mix well. Refrigerate until ready to serve. Best if refrigerated for at least 3 hours. Stir before serving.

This is a quick and easy salad to make. My kids also love it.
