Long Lost Salad

My mom made a salad for Sunday dinner that I had completely forgotten about. It is really yummy so I thought I'd share the recipe!

Roast Beef Pasta Salad
12 oz. medium shell pasta, cooked, drained & rinsed in cold water
1 cup grape tomatoes, cut in half
1/2 cup thinly sliced purple onion
12 oz. (or so) deli roast beef, thinly sliced and cut into strips (julienned)

Mix these 4 ingredients together in a bowl. Cover and refrigerate for at least 1 hour.

1 cup plain yogurt
1/2 cup mayo
1/4 cup fresh parsley, finely chopped
1/4 cup chopped chives or green onion tops
1 tsp. dried dill
1/8 tsp. pepper
1/4 tsp. salt

Mix these ingredients in a separate bowl and refrigerate for at least 1 hour.

Just before serving mix the salad with the dressing.
*Note: This makes a lot of dressing so use your own judgement to dress the salad.

Yeah, Yummy!!! I love pasta in salad and now I can write it down in my "found" ward cookbook!
